Integrated Scales – The Auto Brew Ratio scales are incorporated into the espresso machine’s electronics system and provide the barista a new level of consistency, by giving control over beverage mass.
Using ratio mode, the barista programs the preferred brew ratio into the machine. When preparing to brew, the barista places the loaded portafilter on the drip tray scale, allowing the espresso machine to weigh the ground coffee. The barista may then engage the portafilter and activate the brewing cycle by selecting one of the programmed brew ratio buttons. The Ratio Mode will automatically stop the shot when the correct brew ratio is achieved.
Ratio mode is best applied in coffee bars that do not weigh every ground coffee dose, or those cafes that would like to eliminate the step of weighing and correcting the coffee dose to a tenth of a gram. Auto Brew Ratio allows the barista to eliminate the step of weighing and correcting the coffee dose, while still consistently achieving the same brew ratio.
STRAIGHT IN PORTAFILTER
The Straight In Portafilter is designed to simplify the motions required to engage the portafilter and reduce the strain on the barista for even greater performance and everyday usability. High volume coffee environments demand that a barista can work fast and efficiently to produce drinks during busiest periods of the day.
The Straight In Portafilter can noticeably mitigate the repetitive stress injuries occurring through its ease of action improving the natural workflow and output of barista. It has been proven in a study conducted by FAENTIA CONSULTING S.r.l. that the Straight In Portafilter can reduce strain on the barista by 12 Times / 1200%. The Straight In Portafilter offers workflow efficiency and a universal ease of use.
DRIP PREDICTION ALGORITHM
The Drip Prediction algorithm automatically stops espresso extraction at the correct moment to ensure target beverage mass is reached. Drip prediction works by monitoring the flow of espresso into the cup via load cell, with this data the algorithm is used to predict the exact moment the beverage needs to be stopped in order to reach the correct final weight without the need to set an offset time. Because this system is algorithm based, it does not need to learn over time, and will not lose accuracy if you switch between blends, decaf and single origins.
EASY REBUILD STEAM VALVE
The easy rebuild steam valve is a revolutionary mechanical steam valve that both baristas and technicians will love. It keeps the same standard of steam quality in steaming milk compared to all other La Marzocco machines appreciated from baristas around the world. The valve is also engineered in a way that, in case of ordinary or extra-ordinary maintenance, technicians can access the valve without the need of removing the body panels of the machine, minimizing the machine downtimes and the duration of servicing.
STEAM FLUSH
The Steam Flush automatically cleans the shower screen with a burst of steam and a flush of hot water through the grouphead after each extraction. Thanks to the use of hot steam the shower screen remains clean longer, compared to the use of hot water only, reducing the need of in-shift backflushing of the machine. The Group Steam Flush helps the busiest bars keeping the machine clean also in the busiest rush-hours minimizing the unpleasant flavour notes due to a dirty brew path. The steam flush function can also be set splitting the two separate functions: the group steam clean that consists in a spray of steam and a 3 second hot water auto-flush.

I was in Dublin airport early morning at the Butlers coffees shop back in March 2023 and I was watching the baristas working there using the Marzocca KB90. My attention was grabbed by what I know now is called “the steam flush”. It seemed to be such a great addition to ensuring the freshness of each extraction I’m surprised it’s not a more common feature on all commercial coffee machines. And the “straight in portafilter” struck me as a great idea from a practical point of view. All in all it was my first time seeing one of these machines in action and to my eyes it looked mighty impressive! I’ve worked in the hotel and restaurant business for over 20yrs and have some knowledge of coffee machines having used several different brands including the Marzocca Linea. I’m not an expert though, but I know I got a fdouble espresso and then a really smooth cappuccino- it was 6.30am – that’s my excuse!! Both were excellent! Congrats to Butlers on choosing this machine and furthermore having trained their baristas to use it properly!!
